Apple Pancakes
Whether you're planning breakfast in bed for your sweetie,
craving some comfort on these cold winter mornings, or have a
sweet tooth at dinnertime these Apple Pancakes are absolutely
terrific and ready in about 20 minutes. My plan, and advice
to all you ladies after a man's heart, is to cook these up
with some turkey bacon on Valentines day, because we all know
the old saying: "The quickest way to a mans heart is through
his belly".
Ingredients
2/3 cup each
whole-wheat flour and unbleached flour
1/3 cup
cornmeal
1 tablespoon
baking powder
1 teaspoon
ground ginger
1/2 teaspoon
baking soda
2 cups nonfat
plain yogurt
3/4 cup
fat-free egg substitute
1/4 cup
honey
2 tablespoons
canola oil
1 apple,
shredded
Directions
In a blender or food processor, pulse the flours, cornmeal,
baking powder, ginger, baking soda, yogurt, egg substitute,
honey, and oil until just combined. By hand, stir the apples
into the batter. Coat a large, nonstick skillet with nonstick
spray and heat over medium heat. For each pancake, spoon 2 to
3 tablespoons of the batter into the skillet. Cook until
lightly browned and cooked through, about 2 minutes on each
side. Repeat with remaining batter.
The batter makes about 12 servings, but that also depends on
how big you want your cakes. If you use the 2-3 tablespoons,
as called for in the directions you wind up with 137 calories,
25 grams of carbohydrates, 5 grams of protein, and 1 gram of
fiber per serving. May I also suggest keeping this yummy treat
as healthy as possible by using a sugar-free syrup (I like
Smuckers) and some sliced fruit as a topping.
